Tom ka kai (Chicken Coconut Soup)

Ingredients :
100 grams. chicken fillet, sliced
2 cups thin coconut milk ( Mae Ploy ...better)
1/2 cup thick coconut milk
2 pieces thai chilies lightly crushed
2 pieces galangal sliced
1 stalk lemongrass sliced
1 leaf kaffir lime 1/2 tsp. sugar
1 tbps. fish sauce or salt but bad taste
1 1/2 tbps. lemon juice 1/2 tbs. chili paste

Directions :

- Bring the thin coconut milk to a boil.
- Add lemon grass, kaffir lime leaves, and chicken.
- Add the thick coconut milk.
- Flavor with lemon juice, sugar, chili paste, and fish sauce.
- Add chilies and serve with freshly cooked rice.
